3-Layer Eggplant Lasagna
Ingredients:
1 package of Rossi Pasta Classic Lasagna
3 cups Rossi Pasta Classic Marinara
2 large eggplants, peeled
3/4 cup gorgonzola
4 sweet bell peppers, thinly diced
2 cups mozzarella
2 cups ricotta cheese
DIRECTIONS:
1. Preheat oven to 350 degrees. Start by lightly chopping eggplant, toss with bell peppers. Separate all ingredients in thirds.
2. Lightly oil the bottom of a 9 X 12 baking dish.
3. Then layer ingredients in the following order: 3 lasagna noodles, ricotta cheese, marinara sauce, gorgonzola cheese, eggplant and pepper mix, and mozzarella cheese. Continue process with remaining two layers. When finished, cover the aluminum foil and bake for 1 hour.
