Apple Curried Shrimp with Curry Linguini
Ingredients:
1 package of Rossi Pasta Curry Linguini
1 tablespoon olive oil
1/2 red bell pepper, diced
1/4 cup red onion, diced
2 cloves garlic, minced
1 cup apple juice
1 tablespoon madras curry powder (yellow)
3 cups raw shrimp, peeled and deveined
1 tablespoon cornstarch
2 tablespoon water
salt and pepper to taste
2 roma tomatoes, chopped
2/3 cup green onions, sliced
DIRECTIONS:
1. In a skillet, heat the olive oil over medium-high heat. Add the red bell pepper, onion and garlic and cook until tender.
2. Add the apple juice and curry powder to the skillet and bring to a boil.
3. Add shrimp and cook for approximately 3 minutes. Be sure not to over cook.
4. Mix the cornstarch and water in a small bowl and slowly add to the skillet, stirring constantly, until the sauce thickens. Add salt and pepper to taste.
5.Add the tomato and green onions to the skillet, stir and remove from the heat. Spoon over the pasta, cooked according to package directions, and serve.
