Basil Veggie Pasta Salad
Ingredients:
1 package of Rossi Pasta Zucchini Linguini
1 cup fresh green beans, blanched and sliced in half
1 each red & yellow bell peppers, thinly sliced
1 pint cherry tomatoes, sliced in half
1/2 cup olives
8 oz crumbled feta cheese
1/4 cup toasted pine nuts
Dressing Ingredients
1 bunch basil
1/2 cup olive oil
salt and pepper to taste
zest and juice of 1 lemon
1/2 bunch parsley
1 garlic clove
DIRECTIONS:
1. Put on 4-5 quarts of water to boil.
2. Cook pasta according to package directions. Drain and rinse with cold water to cool.
3. Puree all dressing ingredients in blender and puree until smooth.
4. Toss sauce, vegetables, and olive with pasta in a large bowl.
5. Garnish with the feta, pine nuts, and a sprig of basil.
