Caprese Zucchini Linguini
Ingredients:
1 package of Rossi Zucchini linguini
1/4 cilantro
1/2 cup vegetable oil
1 cup corn kernels
2 cups tomatoes, ½ in dice (heirloom varieties if possible)
1 cup fresh mozzarella, ½ inch cube or balls
salt and pepper to taste
1 lime, cut into 8 wedges
DIRECTIONS:
1. In blender, puree cilantro and oil with pinch of salt.
2. Roast corn in 450° oven for 8-12 minutes until golden.
3. In bowl, toss tomatoes, mozzarella, corn and cilantro oil. Season with salt & pepper. Marinate for 20 minutes.
4. Cook pasta according to package directions.
5. Serve tomato mixture on top of pasta.
6. Garnish with lime wedges.
