Chicken or Shrimp Pesto
Ingredients:
1 package of Rossi Pasta Classic Linguini
1 pound diced chicken or shrimp
1/2 cup pine nuts
1 cup chopped basil
1/4 cup parmesan
1/4 cup chopped parsley
1/2 cup olive oil
1 cup artichokes
1/2 cup olives
1/4 cup sun-dried tomatoes
DIRECTIONS:
1. Put water on to boil. In food processor, combine pine nuts, basil, parmesan, parsley, and olive oil; puree together.
2. In sauté pan, heat 3 tablespoons of olive oil and sauté chicken or shrimp until done. Then add artichokes, olives, and sun-dried tomatoes. Sauté for 1 to 2 minutes.
3. Add pesto from processor. Cook pasta and add to pan making sure to mix well and serve hot with bread and parmesan cheese.
