Chimichurri Steak with Zucchini Linguini
Ingredients:
1 package of Rossi Pasta Zucchini Linguini
1/2 jalapeno
2 tablespoon red wine vinegar
1/2 cup cilantro
1/2 tablespoon oregano
1 tablespoon honey
1 lime-juiced
1/2 cup olive oil
1 teaspoon salt
1/2 teaspoon pepper
12 oz. shoulder tender steak
2 cups grape tomatoes-cut in halves-season with salt/pepper
DIRECTIONS:
1. Combine ingredients 2 through 12 in blender and puree till smooth to make chimichurri sauce. Adjust salt to taste.
2. Marinate steak for 2-4 hour in ¼ of the chimichurri.
3. Grill beef to desired temperature and then allow to rest in warm place for 5 minutes.
4. Cook pasta according to package directions.
5. Toss pasta with tomatoes.
6. Slice beef and fan over pasta.
7. Drizzle chimichurri over everything.
8. Garnish with fresh cilantro
