Citrus Pasta Salad
Ingredients:
1 package of Rossi Pasta Roasted Red Bell Pepper Fettuccini
1 green pepper, diced
1 red pepper, diced
1 yellow pepper, diced
5 large roma tomatoes, diced
3 large carrots, sliced thinly
1/4 cup olive oil
1/2 cup lemon juice
1/4 cup limejuice
1/8 cup balsamic vinegar
DIRECTIONS:
1. Cook pasta according to package directions.
2. Once cooked, rinse in cold water to stop cooking process.
3Once cooled, mix all ingredients together and refrigerate for at least 1 hour, overnight if possible.
