Classic Pasta Salad
Ingredients:
1 12oz. package of your favorite Rossi Pasta
1-2 Tomatoes diced
2-3 Scallions diced
1/4 cup fresh shredded Parmesan Cheese
1/4 cup fresh shredded Romano Cheese
1/4 slice of lime
1/4 cup extra virgin olive oil
DIRECTIONS:
1. Cook pasta according to package.
2. Rinse thoroughly with cold water until pasta is cooled.
3. Drizzle 1 tablespoon of oil on cooled pasta to keep from sticking together.
4. Add tomatoes & scallions to cooled pasta.
5. Squeeze lime juice over mixture and then add remaining olive oil as dressing.
6. Allow to chill for a couple of hours before enjoying your quick delicious pasta dish.
For color, and especially when using the Roasted Red Bell Pepper Fettuccini, dice 2-3 bell peppers, using red, yellow and green. It gives this salad a fresh-crisp to it, and brings out the flavor of the pasta when you use the Roasted Red Bell Pepper Fettuccini.
