Curry Pasta with Snow Peas and Mint
Ingredients:
1 package of Rossi Pasta Curry Linguini
4 teaspoons extra-virgin olive oil
1 ½ cups snow peas
4 scallions thinly sliced
3 teaspoons chopped fresh mint or 1 teaspoon dried mint leaves
2 cups plain yogurt
2 tablespoons all-purpose flour
1 cup pine nuts
DIRECTIONS:
1. Heat oil in a skillet over medium heat.
2. Meanwhile, cook pasta according to package directions.
3. Sauté snow peas, scallions, and mint in oil for about 3 minutes; remove from heat.
4. Combine yogurt, flour, curry powder, and salt. Stir into snow pea mixture and return to heat. Heat until mixture is hot (do not boil).
5. Toss with pasta. Sprinkle with pine nuts and serve.
