Curry Pasta with Cucumber and Mint
Ingredients:
1 package of Rossi Pasta Curry Linguini
4 teaspoons pure olive oil
2 small cucumbers, chopped
4 scallions, thinly sliced
3 teaspoons chopped fresh mint or 1 teaspoon dried mint leaves
2 cups plain yogurt
2 tablespoons all-purpose flour
1/4 teaspoon ground sea salt (optional)
1 cup pine nuts
DIRECTIONS:
1. Heat oil in a skillet over medium heat. Meanwhile, cook pasta as to package directions.
2.Saute cucumber, scallions,, and mint in oil for about three minutes; remove from heat.
3. Combine yogurt, flour, curry powder, and slat. Stir into cucumber mixture and return to heat. Heat just until mixture is hot (do not boil).
4. Toss with hot pasta. Sprinkle with pine nuts and serve.
Serves 4
A NOTE FROM JOHN ROSSI:
The cooling qualities of cucumber and mint wed beautifully with the exotic spice of our Curry Linguini. The last minute addition of pine nuts provides further taste and texture.
