Eggplant Parmesan Pasta


Ingredients:

1 package of Rossi Pasta (your choice of flavor)

1 large eggplant

3 cups marinara

2 cups seasoned breading

2 eggs

1/2 cup cream

1/2 cup flour

1/4 cup frying oil

12 oz shredded mozzarella cheese


DIRECTIONS:

1. Put pasta water on to boil. Was and dry the eggplant and then slice 1cm thick.

2.Mix eggs and cream together until smooth. Dredge eggplant slices in flour, then dip into egg wash, and finally coat in breadcrumbs.

3. Heat marinara sauce in saucepan. Drop pasta into water. When cooked simply drain and add to sauce. Do not rinse.

4. In a frying pan heat oil until hot. Place breaded eggplant in oil and fry untilgolden brown on both sides, approximately 1 to 2 minutes per side. Put the pasta onto serving platter and top with eggplant slices, then finish with the mozzarella cheese.

5. Serves 6
