What sets Rossi Pasta apart from other pastas?
First, its tenderness. Most manufacturers utilize semolina or durum flour, which produces a durable pasta but one which tends to have a tougher, chewier texture when cooked. Rossi Pasta is made with a much softer and less-refined flour -- a variation called “unbleached red spring wheat flour” -- which gives it the distinctive homemade taste we’re famous for.

Second, its flavor. Another benefit of using our special variation of softer flour is that it tends to “carry” a flavor better than do harder, drier, semolina-based pastas. Our pastas thus maintain their flavor profile “from package to plate” better than any you’d typically find on the grocery store shelves.

Third, its color. The unique combination of spices and fresh, all-natural ingredients we employ gives our flavored pastas their fantastic color, sure to enhance the artistic presentation of any dish.

Fourth, its ease of preparation. Our linguinis and fettuccinis cook in 2-4 to 3-5 minutes, respectively -- far less than the typical 8-10 minutes (or more!) characteristic of semolina or durum-based pastas. Some of our variations, like Capelli d’Angelo, cook in as little as 90 seconds!

What are the primary ingredients in your pastas?
Four basic ingredients -- unbleached red spring wheat flour, extra virgin olive oil, eggs, and natural spring water -- make up the primary recipe for all our pastas. The complete list of ingredients for any of our flavors is available upon request.

Where do your ingredients come from?
Our flour comes from grains harvested in North Dakota and Minnesota and milled specially for us by a trusted partner of 21 years. We procure our olive oil, eggs, spices and other ingredients from an equally distinguished list of suppliers -- the finest in gourmet food. Our spring water is delivered to us weekly from a nearby spring in the hills of West Virginia.

Do you use any artificial colors, flavors, or preservatives in your pastas?
No.

How many flavors of pasta do you make?
We have over 50 unique flavors in our constantly evolving recipe vault, most of which we make available every so often on a rotational basis. You will find at least twenty of them available at any one time on our web site and in our catalog. We like to periodically rotate our colors and flavors to keep things interesting.

What are your most popular flavors?
Spinach Basil Garlic Fettuccini, Tomato Basil Garlic Fettuccini, Wild Mushroom Linguini, Capelli d’Angelo, and Roasted Red Bell Pepper Fettuccini.
top

What flavors are new for 2007?
Southwestern Chipotle Fettuccini, Shiitake Fettuccini, and Zucchini Linguini.

Do you make any low-carb, wheat-free, or gluten-free pastas?
Not currently. We have not yet found a way to produce any of these alternative products without sacrificing the attributes that make our pasta unique. Our Whole Wheat Linguini, however, has lower net-carbs and a higher fiber content than one would find in most traditional homemade pastas.

How healthy is Rossi Pasta?
Since 1981 we’ve been in the business of making the finest, freshest, healthiest pastas we can conceive. Pasta and its typical accompaniments are considered foundational elements of the “Mediterranean diet,” which consists of foods thought responsible for the proportionately lower incidence rates of heart disease, cancer, and other chronic diseases in such countries as Italy and Greece. Rossi Pasta in particular is made from an unbleached spring wheat flour which is less-refined than traditional baking flour and therefore contains more heart-healthy nutrients than you’ll find in most commercially produced pastas. We are also absolutely committed to producing a product free of artificial colors, flavors and preservatives -- any kind of additive, in other words, that could have harmful health effects over time.

Why does Rossi Pasta cost more than the pastas I see at the grocery store?
Our pasta is made from the highest-quality ingredients we can procure, and, like most artisanal gourmet products, costs much more to make than commercially produced pastas. To this day we continue to hang, harvest, and package every batch of pasta by hand, making it in every way a more special product than the mass produced pastas available on most grocery store shelves.

Where should I store my Rossi Pasta?
Light, heat, and moisture can all damage our pasta over time. We recommend a cool, dry pantry, cellar, or storage room.
top

How long does Rossi Pasta last?
Rossi Pasta will look, taste, and perform best if prepared within 4 months of the date of purchase. If stored as recommended, however, it can be used with little degradation in quality for 8-months to 1-year after the date of purchase.
