Fettuccini with Pan-Seared Asian Salmon & Spinach
Ingredients:
1 package of Rossi Pasta Shiitake Fettuccini
2 oz butter
1/4 teaspoon crushed red pepper
2 tablespoon garlic, chopped
2 oz. brown sugar
2 oz. lime juice
2 oz. soy sauce
1 teaspoon corn starch
2 oz. orange juice
salt & pepper to taste
4 each salmon filets, approx 4 oz. each
1 tablespoon sesame oil
1 qt. spinach leaves, stems removed, cleaned
1/2 cup cilantro
1 tablespoon sesame seeds
DIRECTIONS:
1. Preheat oven to 400*.
2.In small sauce pan combine first 8 ingredients (except for the pasta). Bring to simmer to thicken. Remove from heat.
3. Season salmon well on both sides with salt & pepper.
4. Heat large oven proof skillet till hot. Sear salmon in sesame oil. Flip salmon, pour prepared sauce over and place skillet in oven.
5. Cook for approx 4-6 minutes till medium done.
6. Meanwhile, cook pasta according to package directions. Stir the spinach into the pasta pot during the last minute of cooking. Strain spinach and pasta together.
7. Top pasta with salmon.
8. Garnish with fresh cilantro & sesame seeds.
