Fettuccini with Sweet Chili, Soy Pork & Asparagus
Ingredients:
1 package of Rossi Pasta Shiitake Fettuccini
1 pork tenderloin (approx. 12 oz.)
1/4 cup soy sauce
1/4 cup sweet chile sauce
1 tablespoon sesame oil
2 cups asparagus, trimmed and cut into 1 inch lengths
1/2 cup chicken stock
salt & pepper to taste
1 tablespoon sesame seeds-toasted
2 tablespoon green onions, chopped
DIRECTIONS:
1. Place pork tenderloin in gallon zip lock bag, add soy & sweet chile. Seal and shake. Allow to marinate for at least 2 hours.
2. Prepare grill and cook tenderloin till done medium. Reserve the marinade. Allow to rest for 5 minutes before slicing.
3. In large sauté pan, sauté asparagus in sesame oil for 3 minutes over medium heat. Add stock & reserved marinade-bring to a boil. Simmer for 3-5 minutes.
4. Cook pasta according to package directions.
5. Toss pasta with asparagus mixture.
6. Slice pork and arrange on top of pasta.
7. Garnish with sesame seeds & green onions.
