1 package of Rossi Pasta Fire! (The Devils Angel Hair)
1 can kidney beans, drained and rinsed well
2 tomatoes, seeded and chopped
1 bunch scallions, sliced (use white and green parts)
1 large green bell pepper, seeded & chopped
1 can whole kernel corn, drained
1/4 cup chopped fresh cilantro
jalapeno pepper, chopped
sour cream
chopped avocado
Dressing
1/2-cup olive oil
1/4 cup red wine vinegar
2 tsp chili powder
1 tsp Cumin
1 garlic clove
Dash cayenne pepper
1. Cook pasta according to package directions. Drain and rinse with cold water until pasta is thoroughly cooled.
2. Mix dressing ingredients together. Mix pasta with vegetables and dressing. Let marinate 1 hour.
3. Serve with garnish of sour cream and chopped avocado.
