Garlic Stock
Ingredients:
1 (28) oz can Amish chicken broth
1 nice bulb of fresh garlic
4 oz extra virgin olive oil
3-4 teaspoons balsamic vinegar
3-4 tablespoons tamari soy sauce
2 tablespoons minced dehydrated garlic (optional)
DIRECTIONS:
1. A day in advance thinly slice one of the garlic bulbs (3 oz or so peeled) and add to the 4 oz extra virgin olive oil. Marinate overnight.
2. The next day in a medium skillet bring 1 cup Amish chicken broth to a slow boil (always low heat), and combine with the garlic and olive oil. Again, bring to a slow boil and let simmer 5 minutes or so.
3. Add 3 teaspoons of balsamic vinegar and 3 teaspoons and 3 teaspoons tamari soy sauce while regaining the slow boil. Simmer 5 minutes.
4. To conclude, add 2 tablespoon of minced dehydrated garlic to the balance of the chicken broth. Simmer 10 minutes. Taste test. I may need a little more vinegar or soy sauce. Add the garlic last.
