Grilled Ginger Chicken Thai Peanut Sauce Asian Noodle Linguini
Ingredients:
Ingredients for Chicken
1 package of Rossi Pasta Asian Noodle Linguini
4-4 oz chicken breast
1/4 cup fresh grated ginger
1 Tbsp sesame oil
1/4 cup fresh chopped garlic
salt and pepper to taste
Ingredients for Sauce
4 garlic cloves-chopped
1/4 tsp dried hot pepper flakes
1 Tbsp vegetable oil
1 tsp tomato paste
4 Tbsp cream peanut butter
1/4 c heavy cream
2 Tbsp hoisin sauce
2 slices of fresh lime
1 tsp fresh chopped cilantro
3/4 cup water
2 ounces canned coconut milk
1 Tbsp soy sauce
2 Tbsp chopped cilantro
DIRECTIONS:
1. Marinate chicken breasts with garlic, oil and ginger for approx 30 min, up to 1 hours covered in refrigerator.
2. Remove chicken from cooler, remove excess marinade and grill on char broiler until internal temperature of 165 degrees is reached. Reserve.
3. For Sauce: Heat oil in medium sauce pan over medium heat. Sauté garlic and pepper flakes until garlic is golden.
4. Add all remaining ingredients (excluding chopped cilantro). Simmer until thick.
5. Heat cooked pasta, and pile approx. 3 ounces onto center of plate. Top with grilled chicken and drizzle with sauce. Garnish with chopped cilantro.
