Grilled Vegetables and  Zucchini Linguini

Grilled Vegetables and Zucchini Linguini


Ingredients:

1 package of Rossi Pasta Zucchini Linguini

1 cup olive oil

2 tablespoons butter

6 garlic cloves peeled

1 medium eggplant

1 medium yellow squash

2 pounds raw shrimp

2 tablespoon McCormick Keywest Seasoning

2 tablespoon Cajun seasoning

1/2 cup shredded parmesan cheese


DIRECTIONS:

1.Cut eggplant and squash into chunks. Place ½ cup of olive oil over cut vegetables and toss to coat..

2. Sprinkle with Keywest Seasoning, toss to coat again and set aside.

3. Season the shrimp with Cajun seasoning and grill both the shrimp and the vegetables, keeping them separate.

4. Use remaining ½ cup olive oil and sauté garlic cloves over medium heat, add butter and reduce heat.

5. Cook the fettuccini according to package directions.

6. Add cooked pasta to olive oil, butter and garlic mixture.

7. Fold in grilled vegetables. Serve pasta with grilled shrimp on top and sprinkle with parmesan cheese.
