Leek & Onion with Rock Shrimp and Zucchini
Ingredients:
1 package Rossi Pasta Leek & Onion Linguini
1/4 cup extra virgin olive oil
6 garlic cloves, chopped
1 zucchini, cut into 1/4 "thick half moons
1 teaspoon red pepper flakes
1 cup white wine
1 pound rock shrimp (can substitute bay shrimp if desired)
4 tablespoons butter, cut into pieces
2 tablespoon Italian parsley, chopped
parmesan cheese to taste
salt and pepper to taste
DIRECTIONS:
1. Sauté garlic in olive oil until just turning golden brown.
2. Add zucchini and pepper flakes. Cook approximately 2 minutes on high heat.
3. Add white wine and reduce by half.
4. Add shrimp and hat through.
5. Remove from heat and swirl butter in to thicken.
6. Serve over pasta cooked according to package directions and garnish with parmesan and parsley.
