Lemon Pepper Fettuccini with Garden Vegetables
Ingredients:
1 package of Rossi Pasta Lemon Pepper Fettuccini
2 tablespoons extra virgin olive oil
1 medium size zucchini squash, sliced in 1/8" slices
1/2 red bell pepper, cut in 1/4 " strips
12 yellow pear tomatoes
1/2 cup black olives, sliced
fresh parmesan cheese, grated
fresh thyme
DIRECTIONS:
1. Put pot of water on to boil for pasta. Make pasta according to directions on package.
2. Heat a medium sized sauté pan the add olive oil. Add zucchini and red bell pepper slices and toss in pan until lightly browned.
3. Stir in tomatoes, olives and fresh chopped thyme. Drain pasta and pour into large serving bowl.
4. Pour olive oil and vegetable mixture over pasta and toss lightly. Top with freshly grated Parmesan cheese and sprig of fresh thyme.
