Lentil Soup with Artichoke Linguini
Ingredients:
1 package of Rossi Pasta Artichoke Linguini
1 bag Bean Cuisine Lots of Lentil Soup Mix
10 cups water, slowly boiling
3 tablespoons tamari
2 tablespoons extra virgin olive oil
3 tablespoons minced dried onion
1 tablespoon minced dried garlic
grated parmesan cheese
freshly milled pepper
DIRECTIONS:
1. Combine the lentils and contents of spice packet with the boiling water. Incorporate well and bring back to a slow boil. Simmer for about 30 minutes.
2. Stirring a few times, add balance of ingredients. Simmer another 30 minutes or so while cooking the pasta and reserving. If it looks as if the lentils are getting a little thick, add a cup or so of water or chicken broth. Should be firmly tender at about 60 minutes. Serve over the warm pasta.
Serves 12 cups lentils and 6 cups pasta
