Orange Pasta Salad
Ingredients:
1 package of Rossi Pasta (your choice of flavor)
5 cups cooked chicken, cubed
1 ½ cups sliced celery
1/2 cup sliced green onions
1 cup pineapple tidbits, drained
1 (11 oz) can mandarin oranges, drained
2 kiwi fruits, peeled and cut into chunks
1 cup mayonnaise
1/3 cup vegetable oil
2 tablespoons cider vinegar
2 tablespoons orange juice concentrate
1 ½ teaspoon salt
1 teaspoon dry mustard
1 cup slivered almonds, toasted
DIRECTIONS:
1. Cook pasta according to package directions, drain and in cold water .
2. In a large bowl, combine chicken, pasta, celery, onions, pineapple, oranges, and kiwi.
3. In a small bowl, mix the next six ingredients. Pour over chicken mixture; toss to coat. Cover and chill for several hours. Toss almonds just before serving.
4. Serves 8-10.
