Pan Roasted Duck on Chipotle Fettuccini


Ingredients:

1 package of Rossi Pasta South West Chipotle Fettuccini

4 duck breast pieces-4-6 oz each

1 tablespoon olive oil

2 oz. real maple syrup

1/4 cup lime juice

3/4 cup heavy cream

Kosher salt to taste

1/4 cup cilantro, chopped


DIRECTIONS:

1. Season duck breast well with salt & pepper.

2. Heat large oven proof sauté pan until hot .

3. Sear duck breasts (skin side down) in olive oil until caramelized & golden.

4. Flip breast-drizzle with maple syrup and put pan into 400* oven for approximately 6-10 minutes .

5. Remove pan from oven-remove duck from pan and allow to rest (5 minutes) before slicing.

6. Place the pan over medium heat and deglaze with lime juice.

7. Add cream and simmer till reduced till thins sauce consistency. Taste for salt.

8. Cook pasta according to package directions.

9. Top with sliced duck breast and lime cream.

10. Garnish with cilantro.
