Parmesan Braised Broccoli & Leeks
Ingredients:
1 package of Rossi Pasta Shiitake Fettuccini
6 oz. Parmigiano Reggiano rind-ask your local cheese shop
1 qt. water
1 teaspoon salt
1/2 teaspoon pepper
2 cups leeks, cleaned & sliced into 1 ½ inch lengths
2 cups broccoli, chopped into 1 inch pieces
1 lemon
3 tablespoon pine nuts
DIRECTIONS:
1. Place parmesan, salt, pepper and water in stockpot. Bring to simmer for 1 hour. You should be left with about 2 cups of stock. If not, add more water or reduce before moving to step 2.
2. Add leeks and simmer for 10 minutes.
3. Add broccoli, cover with lid and cook for 3 minutes.
4. Meanwhile, cook pasta according to package directions.
5. Remove any remaining parmesan rind from stockpot.
6. Serve broccoli, leek mixture over pasta.
7. Garnish with pine nuts & lemon wedges.
