Pasta Gorgonzola
Ingredients:
1 package of Rossi Pasta (your choice of flavor)
1/4 cup butter
1 tablespoon olive oil
1/2 cup whipping cream (optional)
1/2 medium onion, diced
1/4 pound gorgonzola cheese, crumbled (no substitutes)
1/2 teaspoon dried basil or a few fresh leaves, diced
salt and pepper
1/3 cup freshly grated parmesan
DIRECTIONS:
1. Put on 4-5 quarts of water to boil.
2. Melt butter and oil on medium high heat in a large frying pan. Add cream, heat until it foams.
3. .Add gorgonzola and onions. Bring to a boil.
4. Add basil, salt and pepper to taste. Cook on low heat for 3-4 minutes.
5. Lay pasta into rapidly boiling water, stir once or twice. Cook to directions on package .
6. Drain pasta and add to sauce, toss together, add parmesan cheese to taste.
