1 package of Rossi Pasta Capelli d'Angelo (Angel Hair), cooked and cold rinsed
1 package of mushrooms, soaked and chopped with juice reserved
2 tablespoons minced onion, garlic, peppercorn, chives, parsley, and cilantro mixture
1 tablespoon granulated roasted garlic
4-6 oz. cucumber, chopped
2 oz. extra virgin olive oil blended with 1-2 oz. tamari and 1oz.aceto al limone
1. Combine all ingredients and toss well. Chill or serve at room temperature.
Add chopped pimientos if you desire more color. I always use more than less tamari. Substitute rice or balsamic vinegar for the Aceto al Limone if not available.
