1 package of Rossi Pasta Capelli d'Angelo (Angel Hair)
2 large fresh tomatoes, chopped (optional)
1 cup artichoke hearts, chopped
1 bunch scallions, chopped (optional)
2 tablespoons fresh basil or cilantro, chopped
1 pound 40-60 count shrimp, cooked
1/4 cup extra virgin olive oil
1/4 cup tamari or soy sauce
3 tablespoons wine or balsamic vinegar
3 tablespoons limejuice
1. While cooking pasta according to package directions. Prepare other ingredients and blend liquids together in a 2-cup container.
2.Rinse cooked pasta well under cold water and shake off excess vigorously. Incorporate all ingredients together and chill as desired.
Variations include fresh spinach, pimiento, green peas, scallops, hot pepper and olives.
