Quick Summer Sauce Base
Ingredients:
2 cups homemade chicken stock or 1 can no fat/no MSG chicken broth
2 tablespoons extra virgin olive oil
1-2 tablespoon tamari or soy sauce or 1 tablespoon mushroom soy (blackstrap molasses type flavor)
2 tablespoon rice vinegar
2 tablespoons marsala wine or mirin (sweet sake) or pineapple juice
1/2 tablespoon “fish sauce” (from any oriental grocery)
1 tablespoon fresh chopped chives
1 tablespoon fresh chopped oregano
1 tablespoon fresh thyme leaves
1 tablespoon fresh summer savory or parsley
1 tablespoon fresh thinly sliced garlic
1/2 teaspoon chili oil or hot pepper flakes

DIRECTIONS:
1. Bring half the broth or stock to a slow boil with all other liquids except the fish sauce. Add the garlic and chives and simmer a few minutes on low heat.
2. Add the balance of herbs and simmer a few more minutes.
3. Add the balance of broth, chili oil, and the fish sauce if desired and return to a slow boil. Remove from heat. Use at once with anything!.
4. Serves 3 cups

“ I vary the herbs nightly but generally stick to pretty much the same liquid base, give or take lemon or grapefruit juice if I have it on hand in place of the Mirin or Marsala.
