Radiatore with Carmelized Onion
Ingredients:
14 tbsp unsalted butter or no-fat butter
4 tbsp olive oil
2 jumbo sweet onions, coarsely chopped
4 tbsp dry vermouth
2 tbsp fresh thyme leaves
1 tsp sea salt (optional)
freshly ground gourmet pepper blend to taste
1 cup grated reggiano parmesan cheese
1 package Rossi Pasta Radiatore
DIRECTIONS:
1. In a large heavy saucepan over very low heat combine butter and olive oil.
2. Add chopped onion, cover and cook. Stirring frequently until onion caramelizes, about an hour.
3. Add vermouth, thyme, salt and pepper into mixture.
4. Cover and cook for 5 minutes. Keep warm over very low heat.
5. Prepare pasta to according to package directions. Drain thoroughly .
Drain pasta and incorporate with sauce.
Sprinkle Parmesan cheese on top.
