Roasted Chicken and Tomato Basil Garlic Lasagna
Ingredients:
1 package of Rossi Pasta Tomato Basil Garlic Lasagna
pulled chicken from a whole roasted chicken
2 tablespoon olive oil
1/2 cup diced red pepper
1/2 cup diced green pepper
3 whole garlic cloves minced
1 large onion chopped
2 cans chopped tomatoes in juice
1/3 cup sugar
1 teaspoon salt
fresh ground pepper
1 cup fresh basil chopped
1/2 pound fresh mozzarella cheese sliced
1 cup ricotta cheese
3/4 cup water
DIRECTIONS:
1. Heat olive oil over medium heat. Sauté peppers, garlic, and onions in oil. Add tomatoes, sugar, salt and pepper, and pulled meat from the roasted chicken. Fold in chopped basil.
2. Spray lasagna pan with food release spray. Lay three uncooked lasagna noodles in bottom of pan and lightly spread some ricotta cheese over them. Top with sauce mixture and repeat process with remaining lasagna, ricotta and sauce. Lay fresh mozzarella slices on top of lasagna. Pour water into corner of pan and cover lightly with foil, careful that the foil is not touching the cheese. Bake 1 hour at 375*. Let sit for 10 minutes before serving.
