Roasted Red Bell Pepper Lasagna Roll Ups
Ingredients:
1 package of Rossi Pasta Roasted Red Bell Pepper Lasagna
1/2 pound finely chopped and cooked chorizo sausage
2 pounds grated quesadilla cheese
1/3 cup cilantro
2 eggs slightly beaten
6 large mushrooms grated
1/2 cup breadcrumbs
1 cup small curd cottage cheese strained
1 jar Rossi Vodka Sauce
DIRECTIONS:
1. Cook lasagna noodles until al dente. Combine sausage, cheeses, cilantro, eggs, mushrooms and breadcrumbs.
2. Lay lasagna noodle out and place 1/3 cup of mixture in center and roll up. Place lasagna roll standing up in shallow pan and repeat with remaining lasagna and mixture. Pour Vodka sauce over lasagna rolls and bake at 375* until heated through, approximately 30 minutes.
serve 2 lasagna rolls per serving. Serves 4
