Rossi Spinach and Pasta Salad

Rossi Spinach and Pasta Salad


Ingredients:

1 package of Rossi Pasta (your choice of flavor)

1 tablespoon wine vinegar

1-2 large eggs, beaten

1 tablespoon real mayonnaise

1/2 squeezed lemon

4 large cloves garlic, minced

1/2 teaspoon Italian seasoning

1/2 teaspoon black pepper

3 liberal dashes cayenne

3 oz. salad oil

7 oz. olive oil

16 oz. fresh spinach, washed and chopped

2 avocados, peeled and sliced thinly

4-6 scallions, chopped

4 oz. fresh mushrooms, sliced

2-3 radishes, finely chopped

3 oz. crumbled blue cheese


DIRECTIONS:

1. Prepare ½ hour ahead of time. Blend together the wine vinegar, eggs, mayonnaise, and lemon.

2.Add garlic, Italian seasoning, black pepper, and cayenne and shake vigorously.

3. Add salad oil and olive oil and shake again. Refrigerate.

4. Put on 6 quarts water to boil. Toss together spinach, avocados, scallions, mushrooms, radishes, and blue cheese.

5. Add pasta to boiling water, stir once or twice, and cook to directions on package. Drain pasta and rinse with cold water. Incorporate with vegetables and chill. Add dressing before serving.
