Rossi Pasta Tex-Mex Lasagna

Rossi Pasta Tex-Mex Lasagna


Ingredients:

1 package of Rossi Pasta Classic Lasagna

16 oz. refried beans mixed with 1 tablespoon chili powder and 1 teaspoon ground cumin

16 oz. salsa, medium hot

1 cup chopped green pepper

1 tablespoon fresh jalapeno pepper, chopped (optonal)

1/2 cup fresh tomato, chopped

1/2 cup green onion, chopped

1/2 cup ripe olives, chopped

8 oz. sour cream

12 oz. Monterey Jack Cheese, shredded


DIRECTIONS:

1. Preheat oven to 375*.

2. If parboiling noodles, cook according to package directions. Lightly oil a 9x13x2 pan. Layer ingredients in the following order: ½ cup salsa, 3 noodles, ½ cup salsa, green and jalapeno peppers, 1/3 cheese, 3 noodles, refried beans, ½ cup salsa, 1/3 cheese, 3 noodles, sour cream, ripe olive, green onion, tomato, 1/3 cheese, 3 noodles, ½ cup salsa. (If noodles were not parboiled prior to assembly, carefully pour ¾ cup water into a corner of the pan.)

3. Cover with foil and bake for 30 minutes. Uncover and bake an additional 10-15 minutes. Let stand 15 minutes before serving.
