Rossi Pasta with Peas, Onions, and Eggs
Ingredients:
1 package of Rossi Pasta (your choice of flavor)
2 tablespoons butter
4 tablespoons olive oil
2 tablespoons balsamic vinegar
2 tablespoons tamari or soy sauce
1 medium diced onion
1 or 2 cloves garlic, minced
6 oz. frozen green peas
3 large eggs
1 cup milk
1/2 cup fresh grated hard cheese
juice of ½ lemon
DIRECTIONS:
1. Put on 4 quarts of water to boil.
2. Rinse frozen peas in very hot tap water for about 5 seconds. Reserve.
3. In a large skillet melt the butter with the olive oil (med-heat). Saute the onions and garlic for a minute.
4. Add peas, turn off heat.
5. Cook pasta according to package directions. Strain and shake off excess water. Transfer to skillet and turn heat to medium.
Add the whole eggs, milk and half of the cheese. Toss mixture vigorously and turn heat up to med-hi. Add vinegar and tamari. Stir a few more times.
Reduce heat to low. Cover skillet and allow to simmer for 2 minutes or so. Uncover. Squeeze in lemon and cover surface lightly with grated cheese. Turn off heat. Twist a little black pepper. Serve with lemon wedges.
