Saffron Linguini Paella Style
Ingredients:
1 package of Rossi Pasta Saffron Linguini
6 oz. chorizo sausage
1 cup diced red onion
1 tablespoon garlic, chopped
4 oz. mussels
8 oz. shrimp
4 oz. clams
8 oz. roma tomatoes, chopped
1/2 cup white wine
1 cup clam juice
1 cup peas
1 lemon, cut into wedges
3 tablespoons cilantro
salt and pepper
DIRECTIONS:
1. In large skillet cook sausage until done. Drain fat.
2. Add red onion and garlic and sauté for 5 minutes.
3. Add white wine, clam juice, mussels, shrimp, clams, and tomatoes.
4. Cover with lid and bring to a strong boil. Cook until clams and mussels have opened-discard any that do not open.
5. Add peas and cook for 2 minutes.
6. Serve over pasta cooked according to package directions and garnish with lemon wedges and cilantro.
