Saracen Pasta
Ingredients:
1 package of Rossi Pasta (your choice of flavor)
8 cloves garlic, finely minced
1/2 cup olive oil, use ½ at a time
2 oz. anchovies, chopped or mashed
1/2 cup dry white wine
1/2 cup fish stock (dashy)
2 oz. raisins
1/3 cup sun-dried tomatoes, coarsely chopped
1/2 cup fresh parsley leaves
1/3 cup pine nuts
1/3 cup unseasoned breadcrumbs
DIRECTIONS:
1. Saute garlic in half of the olive oil over medium heat. Add anchovies, mashing until dissolved.
2.Add wine and cook until liquid reduces by about a third. Stir in fish stock, raisins, tomatoes, and parsley and simmer for 2 minutes.
3. Cook pasta according to package directions.
4. In another pan, sauté pine nuts and breadcrumbs in the remaining olive oil until golden brown. Toss pasta with other mixture and then top with nuts and breadcrumbs.
