Simple Spinach Pasta Sauce
Ingredients:
2 tablespoons extra virgin olive oil
1/2 medium onion, minced
4 cloves garlic, minced
1 ½ tablespoon balsamic vinegar
1 cup heavy cream
1/2 cup chicken stock
1 pound fresh cleaned and patted dry spinach
1/2 teaspoon hot pepper flakes
1/4 pound pecorino romano, grated
lemon wedges
salt
pepper
DIRECTIONS:
1. Sauté the onion and garlic in the olive oil a few minutes. Add chicken stock and vinegar and baring back to a boil.
2. Add the spinach and sauté a short couple of minutes. Add the cream, hot pepper, and half of the romano. Bring back to a boil.
3. Remove from heat. Salt and pepper to taste. Serve with pasta, balance of cheese, and lemon wedges.

Sauté in some shrimp or calamari for a variation.
