3 pounds bony chicken parts, cut up
12 cups water
1 cup celery with leaves
1 carrot
1 onion halved with 2 cloves stuck in
1 bay leaf
12 peppercorns
1/2 teaspoon thyme
1 tablespoon salt
1. Cook 2 hours on medium heat uncovered after bringing to a boil.
2. Sieve well, discard solid matter, and chill overnight. Freeze what you do not use.
