Simple Pasta Fagioli Rossi Style


Ingredients:

1 package of Rossi Pasta (your choice of flavor), cooked per package directions

1 jar of Rossi Pasta Classic Marinara

1 (15) oz. can beans of your choice black, garbanzo, or kidney (drained)

2 tablespoons extra virgin olive oil

1 lemon, wedged

2 tablespoons balsamic or red wine vinegar

2 tablespoons tamari or soy sauce

6 oz. freshly grated pecorino, romano, or parmesan cheese


DIRECTIONS:

1. Add to still warm pasta the red sauce and beans, olive oil, vinegar, tamari, and half the cheese.

2. Stir well on low-heat until hot. Serve with balance of cheese, lemon wedges and freshly milled pepper.

Serves 6

NOTES AND SUGGESTIONS:

For a variation, sauté 6 oz. sliced portabella or other fresh mushrooms in the olive oil in a skillet with tamari and balsamic vinegar for about 2 minutes on me-lo heat. Incorporate into pasta and bean mixture above. For zing add 1 teaspoon hot pepper flakes. For crunch add two tablespoons minced dehydrated onion. Also, the same amount of cleaned and cooked shrimp would sauté in nicely.
