Southwestern Caprise Chipotle Fettuccini
Ingredients:
1 package of Rossi Pasta South West Chipotle Fettuccini
1/4 cup cilantro
1/2 vegetable oil
1 cup corn kernels
2 cups tomatoes, ½ inch dice (heirloom varieties if possible)
1 cup fresh mozzarella, ½ inch cubes or balls
salt and pepper
1 lime, cut into 8 wedges
DIRECTIONS:
1. In blender, puree cilantro and oil with pinch of salt.
2. Roast corn in 450* oven for 8-12 minutes till turning golden.
3. In bowl, toss tomatoes, mozzarella, corn and cilantro oil. Season with salt & pepper. Allow to marinate for 20 minutes.
4. Cook pasta according to package directions.
5. Serve tomato mixture on top of pasta.
6. Garnish with lime wedges.
