1 package of Rossi Pasta Southwestern Chipotle Fettuccini
4 tablespoon butter
2 cups heavy cream
1 cup roasted piquillo peppers cut into large chunks
1/2 cup fresh cilantro chopped and enough for garnish
4- 5 oz chicken breast seasoned and grilled
salt and pepper to taste
1. Melt butter in large skillet over medium heat. Add cream and reduce mixture until slightly thicken. Add salt and pepper, chopped cilantro and peppers.
2. Cook pasta according to package directions and immediately add to cream sauce mixture. Slice grilled chicken breast and place on top of pasta. Garnish with remaining chopped cilantro.
