Southwestern Chipotle with Shrimp, Andouille Sausage & Green Tomatoes
Ingredients:
1 package of Rossi Chipotle Fettuccini
1 cup Andouille sausage-cut into coins
1 cup shrimp, peeled and cleaned
1 each green tomato
1/2 cup chicken stock
salt and pepper to taste
1/2 cup green onions, chopped
DIRECTIONS:
1. In large sauté pan cook sausage until done.
2. Meanwhile, cook pasta according to package directions.
3. Add shrimp, tomatoes & chicken stock to sausage and cook till shrimp are just done. Season to taste with salt & pepper.
4. Toss sausage-shrimp mixture with pasta.
5. Garnish with green onions.
