Spinach Basil Garlic Lasagna
Ingredients:
1 package of Rossi Pasta Spinach Basil Garlic Lasagna
3 cups ricotta cheese
1/2 cup parmesan cheese, grated (plus 2 teaspoons for topping)
2 eggs
1 teaspoon garlic, minced
2 cups cooked spinach, chopped
1/4 teaspoon cayenne pepper
1 ½ pounds chicken, cubed
2 cups fresh tomatoes, chopped
1/2 cup green onion, chopped
1 pound smoked gouda cheese
1 ½ cups half & half
3/4 cup water
salt and pepper
DIRECTIONS:
1. Preheat oven to 375*.
2. Combine first 6 ingredients. Add salt and pepper to taste. Lightly oil a 9x13x2" pan and pour in ½ cup of half & half.
3. Layer ingredients in the following order: 3 noodles, 1/3 ricotta mixture, ½ tomatoes, ½ onions, ¼ gouda, 3 noodles, 1/3 ricotta mixture, chicken, ¼ gouda, 2 noodles, 1/3 ricotta mixture, ½ tomatoes, ½ onions, ¼ gouda. Top with 3 noodles.
4. Pour 1 cup of half & half over noodles. Pour ¾ cup water in corner of pan. Cover with lightly oiled foil and bake 60 minutes.
5. Uncover and top with remaining gouda and 2 teaspoons of Parmesan. Bake for 10 more minutes.
