Summer Sesame Noodles
Ingredients:
1 package of Rossi Pasta Capelli d'Angelo (Angel Hair), cooked, drained, and chilled thoroughly under cold water (shake well, reserve)
1/3 cup olive oil
1/4 cup tamari or soy sauce
2 tablespoons toasted sesame seeds (optional)
1 tablespoon finely chopped fresh ginger
4-6 scallions, chopped
1 small jar of minced pimentos
1/4-1/2 teaspoon hot chili oil OR ¼-1/2 teaspoon hot pepper flakes
DIRECTIONS:
1. Prepare the dressing by mixing all the ingredients above (except the cooked pasta) in a large bowl.
2.When blended well incorporated with the chilled pasta vigorously.
3. Top with sesame seeds and serve.

Looking for a nice garnish? Try shredded red cabbage and/or thinly sliced radish.
NOTES AND SUGGESTIONS:
You may add slightly steamed broccoli or snow peas for a variation. You may also add 8 oz. sautéed chicken or pork while increasing seasonings (not oil) by half; still serve chilled.
