Summer Fettuccini Salad with Garlic


Ingredients:

1 package of Rossi Pasta Classic Fettuccini

1-2 cloves fresh garlic

3 tablespoons olive oil

2 fresh tomatoes, chunked or chopped fine (reserve the juice)

tops of 2 scallions

1 tablespoon freshly grated parmesan or other hard cheese

extra-virgin olive oil

salt and pepper


DIRECTIONS:

1. Cook the pasta according to package instructions. Drain and rinse in cold water until cooled (to stop the cooking process).

2.Thinly slice the garlic cloves. Sauté until golden in 3 tablespoons of olive oil. Remove garlic from oil with a slotted spoon when done or it may burn. Reserve the oil and allow cooling.

3. Thinly slice the tops of the two scallions.

4. Gently toss the pasta with all ingredients. Add extra-virgin olive oil as necessary for the texture of the salad. Add salt and pepper as desired.
