1 package of Rossi Pasta (your choice of flavor)
2 large tomatoes
1 small zucchini, thinly sliced and chopped
1/2 cucumber, thinly sliced and chopped
1/2 green pepper, chopped
1/2 red bell pepper, chopped
4 or so scallions, chopped
1 teaspoon fresh thyme, chopped
1 teaspoon minced dehydrated garlic
1/3 cup extra virgin olive oil
3 tablespoons limejuice
1 ½ tablespoon balsamic vinegar
1 ½ tablespoon tamari
black pepper, milled
lemon wedges
1. Cook pasta according to package directions.
2.Toss all ingredients vigorously with cooked pasta. Good hot or cold. Serve with black pepper mill and lemon wedges.
Serves 3 cups.
