1 package of Rossi Pasta Tagliarini
1 pound firm tofu, chopped
3 oz. portabella mushrooms, chopped
4 or 5 scallions, chopped
1 small handful fresh cilantro, chopped (optional)
10 oz. frozen sugar snap or snow peas, blanched
1/4 cup pineapple juice
4-5 tablespoons tamari or dark soy sauce (adjust for taste at end)
3 tablespoons extra virgin olive oil
3 tablespoons rice vinegar
2 tablespoons lime juice
1 tablespoon sesame or chili oil
1-2 tablespoons chipped fresh ginger or sliced jarred pickled ginger
1 ½ tablespoon thai seasoning blend
1. Combine all liquids with everything but the pasta and incorporate it well. Then combine with the pasta.
2. Taste test for seasoning and soy sauce. Chill for about 2 hours, taste again.
Feel free to do other vegetables or maybe shrimp. Also if you dont have Thai seasoning try Creole, jerk, or your favorite.
