1 package of Rossi Pasta Italian Spice Linguini
2 cans tuna, packed in olive oil if possible
1 tablespoon olive oil
1 cup red onion, diced
1 tablespoon garlic, chopped
3 cups roma tomatoes, diced
1 cup yellow bell peppers, chopped
1/2 cup calamata olives, pits removed, rough chop
2 tablespoons pepperoncini, diced
2 tablespoons basil, fresh, chopped
2 tablespoons manchego, shredded
salt and pepper
1. Sauté red onions and garlic in olive oil until onions are translucent.
2. Add tomatoes, olives, pepperoncini, and bell peppers and sauté over medium heat for an additional 3 minutes.
3. Add tuna and simmer for 4-6 minutes till hot throughout.
4. Serve over pasta cooked according to package directions and garnish with basil and manchego.
