Tunisian Mussel Skillet Dish
Ingredients:
1 package of Rossi Pasta (your choice of flavor)
48 mussels
1 medium onion finely chopped
1/4 cup olive oil
3 tablespoons leeks, dried
2 ½ cups diced tomatoes
2 cups fish stock
2 stalks celery, thinly sliced with leaves
2 tablespoons lemon juice
1 teaspoon ground cumin
1 teaspoon cayenne or a tad less
1 cup fresh parsley chopped
2 scallions finely chopped
salt and pepper
DIRECTIONS:
1. Cook pasta according to package directions.
2. Steam mussels in about 1 cup of water. Strain and reserve the water. Sauté the onion in olive oil. Stir in leeks and celery and sauté for a few minutes.
3. Add mussels liquid, tomatoes, fish stock, lemon juice, cumin, cinnamon, and cayenne. Simmer for about 20 minutes.
4. Stir in pasta and then add the parsley and green onions. Toss well and add mussels.
