Whole Wheat Linguini with Mushroom Ragu

Whole Wheat Linguini with Mushroom Ragu


Ingredients:

1 package of Rossi Pasta Whole Wheat Linguini

1 tablespoon olive oil

1 cup white onion, chopped

2 garlic cloves, minced

1 pound mixed mushrooms (cremini, oyster, shiitake), chopped

1 tablespoon kosher salt

1/2 cup marsala wine

2 cups chicken or vegetable stock

1/3 cup cream

5 basil leaves, chopped

1/4 cup Italian parsley, chopped

3/4 cup parmesan

salt and pepper


DIRECTIONS:

1. Sauté olive oil, garlic, and onions until translucent.

2. Add mushrooms and salt and cook over high heat until almost all of the moisture has evaporated.

3. Add Marsala, stock, and cream and cook approximately 20 minutes over low heat to strengthen flavors.

4. Add basil and parsley in last 5 minutes of cooking.

5. Remove from heat and stir in parmesan.

T6. Serve over pasta cooked according to package directions and garnish with parmesan and parsley.
